    The Kanetsune KC-815 Kiritsuke

is a masterpiece of Japanese blacksmithing that combines functionality and aesthetic perfection in one knife. With its characteristic, tapered blade that is the ideal length, this Kiritsuke is not only a symbol of traditional Japanese culinary culture, but also an extremely versatile tool for precise cutting work.

At the center of the Kiritsuke is a core layer of powder metal, which stands for its incomparable sharpness and durability. This is covered by 101 layers of Damascus steel, which not only give the knife impressive flexibility and edge retention, but also make each piece a unique work of art thanks to its wave-like pattern.

The ergonomically shaped handle guarantees excellent handling and control, while the included elegant wooden box and the traditional wooden sheath (Saya) offer adequate protection and a stylish presentation option. The Kanetsune KC-810 Namishibuki Kiritsuke is therefore the ideal choice for professional chefs and demanding amateur cooks who are looking for an exceptional, versatile and visually appealing knife for their kitchen work.

    The care

After each use, hand-wash knives with mild detergent and warm water. Dry immediately to prevent rust. Maintain wooden handles by protecting them from prolonged water baths and occasionally treating them with wood oil. Avoid contact with acidic foods to protect the blade. Use soft cutting surfaces such as wood or plastic. Sharpen regularly with a whetstone instead of a honing rod. Store knives safely on magnetic strips or in knife blocks. Always follow the manufacturer's specific care instructions for best results.
