The Kanetsune KC-465 Kiritsuke
is a masterpiece of Japanese blacksmithing, specially designed for demanding kitchen tasks. With a blade length of 17 cm, it combines the versatility of a traditional Japanese all-purpose knife with the precision of a specialized cutting tool. These properties make it a preferred choice for professional chefs and ambitious home cooks alike.
The blade of the Kiritsuke is made of high-quality Aogami No. 2 steel, a type of steel known for its exceptional sharpness and durability. Thanks to the Rockwell hardness of 61 to 62 HRC, the knife retains its cutting ability significantly longer than most European knives, giving it exceptional edge retention. These properties guarantee that the Kiritsuke will maintain its outstanding performance over a long period of time, even with intensive use in the kitchen.
The handle of the knife, made of red sandalwood and designed in a traditional D-shape, not only offers an aesthetic complement to the high-quality blade, but also ensures ergonomic and comfortable handling. This combination of advanced material, precise workmanship and well-thought-out design makes the Kiritsuke from the KC-460 series by Kanetsune Seki an indispensable tool for every kitchen, which impresses in both functional and aesthetic terms.

The care
After each use, hand-wash knives with mild detergent and warm water. Dry immediately to prevent rust. Maintain wooden handles by protecting them from prolonged water baths and occasionally treating them with wood oil. Avoid contact with acidic foods to protect the blade. Use soft cutting surfaces such as wood or plastic. Sharpen regularly with a whetstone instead of a honing rod. Store knives safely on magnetic strips or in knife blocks. Always follow the manufacturer's specific care instructions for best results.
