    The Kanetsune KC-462 Santoku

is a prime example of the fusion of traditional Japanese blacksmithing with modern requirements for kitchen tools. With a blade length of 16.5 cm, this knife is specially designed for the needs of the modern kitchen, where it proves its versatility when cutting meat, fish and vegetables.

The blade is made of Aogami No. 2 steel, a high-caliber steel known for its outstanding sharpness and exceptional edge retention. This steel enables the Santoku to offer a fine and precise cut, making it an indispensable tool for any kitchen activity. The special composition of the Blue Steel ensures that the knife retains its sharpness over a long period of time, which minimizes maintenance and maximizes the pleasure of cutting.

The outstanding blade is complemented by a handle made of red sandalwood, whose traditional D-shape ensures ergonomic handling. This design enables a natural and comfortable grip, which prevents hand fatigue even after prolonged use. The noble red tone of the sandalwood also gives the knife a warm and inviting look that sets an accent in every kitchen. The Santoku of the KC-460 series by Kanetsune combines aesthetic elegance with functional excellence, making it the ideal choice for chefs who value quality, performance and design.

    The care

After each use, hand-wash knives with mild detergent and warm water. Dry immediately to prevent rust. Maintain wooden handles by protecting them from prolonged water baths and occasionally treating them with wood oil. Avoid contact with acidic foods to protect the blade. Use soft cutting surfaces such as wood or plastic. Sharpen regularly with a whetstone instead of a honing rod. Store knives safely on magnetic strips or in knife blocks. Always follow the manufacturer's specific care instructions for best results.
