Nakiri
A nakiri is a Japanese kitchen knife used for cutting vegetables. It has a rectangular blade with a straight edge that runs to the tip of the knife. Compared to a traditional Western chef's knife, a nakiri has a thinner blade and a sharper cutting edge.
